Carol’s Apple Cookies

Whew!  I have been out of touch for the last couple weeks and I am so glad to be sitting back at my computer!  I missed my little blog and am looking forward to sharing some great tales of my recent adventure and also some fabulous new recipes for fall!  Starting with Auntie Carol’s Apple Cookies via Grandma Paulsen’s recipe box.

Apples are plentiful right now and so I thought this would be a good time to try out Grandma Paulsen’s recipe for Apple cookies.  I suspected that this recipe originally came from my Aunt Carol and so I asked her.  She said “if the cookies are good, the recipe is mine.  If they aren’t, it isn’t my recipe!”    That sounds EXACTLY like my Aunt Carol and it sounds like something my Grandma would have

said also 🙂  One thing I remember about growing up in Nebraska and attending family functions in Eastern Nebraska … my Grandmother and my aunts always made lots of cookies and “bars” (as they would call them.)  I have only scratched the surface of the cookie and bar recipes that I have uncovered from Grandma P. 
 
My mom made these cookies for us.  She used apples fresh off my brother-in-law’s tree.  We used a mix of Red Delicious and Winesap.  It was a good mix for the cookies – a little sweet and a little tart.   The frosting gave the crowning touch.

CAROL’S APPLE COOKIES
INGREDIENTS:
1/2 cup shortening
1 1/3 cups brown sugar
1 egg
1/2 teaspoon salt
2 cups flour
1 teaspoon cinnamon
1/4 cup milk
2 cups diced apples
1/2 cup nuts and/or raisins, optional
DIRECTIONS:
*  Cream shortening, sugar, and egg together
*  Mix in remainder of ingredients
Bake in 400 degree oven for 11 to 14 minutes.
Frost with vanilla icing

FROSTING Ingredients:

  • 2 cups confectioners’ sugar, sift before measuring
  • 1 1/2 tablespoons butter, soft
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 to 4 tablespoons milk

Preparation:

Combine all icing ingredients in small mixing bowl. Stir until smooth and well blended. Adjust for spreading consistency if necessary, adding more milk or more confectioners’ sugar. Spread icing or drizzle on warm cookies.

*  We used both raisins and walnuts.  Walnuts in particular go well with apples!

A Prayer for our adult children, from Stormie Omartian

LORD, I pray You would teach me how to intercede for my adult children. Thank You that You love me and my children and that You will hear my prayers for them.  Set me free from all worry and concern I have about them so I can have peace.  Thank You that Your love and power poured out in me means that my prayers for them will have power.  Help me to forgive my adult children’s other parent for anything I feel he or she did wrong in raising them. Help me to forgive anyone who has hurt my children in any way. Help me to forgive myself for any time I feel that I have not been the perfect parent.  In Jesus’ name I pray.
