Cornbread Waffles

80 years strong it was a great day yesterday when mom, Lee and I took to the links and golfed at Tim’s Ford State Park.  The weather was a balmy 78 degrees and just perfect.  Mom golfed 9 holes, which is the first time in 3 years.  She quit golfing 3 years ago with severe back pain.  But that pain is gone, the weather is mild and she golfed consistently straight down the fairway, just like always.  Way to go mom!

Last week I made Cornbread Waffles to go along with our Mustgo BBQ dinner (posted September 27).  Now I can’t take credit for the idea of making cornbread in my waffle maker.  My sister-in-law, Liz, told me about it some time ago.  I think she read about it or saw it on TV.  However, just as I was thinking about adding it to my recipe blog my husband saw a story on TV about a Memphis restaurant that made cornbread in a waffle iron!  He said, “Honey, they make cornbread like you do!”  If I had posted this recipe sooner maybe I could take credit for their great waffle cornbread success.  But, in reality I have no idea who thought this up but it is a great idea.  The cornbread comes out thin, slightly crispy, easy to butter and not a bit crumbly.  Just how we like it.  I hope you like it too!

Crispy Cornbread Waffles, Southern Style
2 cups Self-Rising Cornmeal Mix
1 1/3 cups milk or 1 3/4 buttermilk
1/4 cup oil (vegetable, canola, olive)
1 large egg
No-stick Cooking sprayBEAT egg in medium bowl.

STIR
in milk, oil, egg, and corn meal mix until smooth.  Batter should be creamy and pourable.  If too thick, add 1 to 2 tablespoons more milk.

HEAT
waffle iron.  Spray with no-stick cooking spray.Pour  approximately 1/2 cup batter onto hot sizzling waffle iron.  Cook until brown, according to your waffle maker instructions.  ** Your waffle iron may take more or less batter based on its size, just adjust accordingly.

Serve with butter.
Noteworthy:

  • In the south, we put sugar in the tea and leave it out of the cornbread.  My northern friends may want to add 1 or 2 teaspoons of sugar to the mixture:)
  • A regular waffle iron or a Belgian waffle iron both work for this recipe, although I prefer the waffles made by the regular iron.
  • At the table, I like to use spray I Can’t Believe Its Not Butter  on the waffles because it coats them so evenly.

My waffle iron is the cutest little thing making five little hearts, but if yours isn’t quite as cute as mine, your waffles will still taste wonderful!

  2. Looks delicious!!! One good thing about cold weather is the soups and stews – with the cornbread. Another thing we learned about cornbread made this way – you can make a lot, put it in the fridge and reheat it in the toaster – one piece at a time! (Not that we need that much bread….)
