Ready or not a new week is upon us!  I hope you had a good weekend and are ready for another busy-as-usual midsummer week.  We had almost 2 inches of glorious rain in the past few days and it has turned our very browned and burned up world quite green.  It amazes me how just a bit of rain can change our attitude, our view, and definitely our garden!  Our first fruits have arrived from our cantaloupe patch.  The Chief had the honor of cutting up the first one.  It tastes as sweet as any candy — juicy and fresh.

Speaking of juicy, two weeks ago my quite generous sous-chef dish-washing mom bought us this newfangled juicer.

I actually don’t know if it is a new design or not. It is just new to us!  We were browsing a favorite kitchen gadget store in Huntsville, Alabama recently and mom ran across this.  We played with it long enough to convince ourselves we needed it. Turns out – we did need it!

I have used it almost daily since bringing it home.  I started out squeezing fresh orange juice in my iced tea.  Then lemons for cooking.  Just today I squeezed lime juice into a huge pot of salsa we were canning.  There were 3 or 4 different designs.  We ended up buying this one that actually ratchets as you squeeze.  I am glad we chose this one because it makes squeezing easy and the juice just flows so quick.  I highly recommend it!
One of the first fruits from last season were peaches from our two little peach trees.  During a recent inventory of my canned fruits and vegetables I realized I needed to use up some of our canned peaches from last year.
It was Saturday morning.  I had peaches in the pantry and pancakes on my mind.  I started thinking about these peaches that I canned last summer and decided to cook them up into a compote.  I started with a little butter, added the peaches and got them cooking well.  I turned down the heat and added some brown sugar.  I let them cook on low as I made the pancakes.
I mixed up one of my favorite recipes of multigrain pancakes.  Not only are these sort of healthy — they are delicious!  All-purpose flour, whole wheat flour, cornmeal, and oats are just the beginning of these wonderful buttermilk cakes!
While the compote was simmering I made the most amazing discovery in cooking pancakes … I had a mixture of butter, brown sugar, and cinnamon I made to serve with baked sweet potatoes earlier in the week.  As I reached for some butter to grease the griddle I decided to use up the brown sugar butter.  OH MY WORD!  What a great discovery!  Have you ever done this?   
The brown sugar butter creates the most incredibly crispy and sweet edge around the pancakes.  When topped with the hot peach compote it is magic!
