My New Favorite Veggie Casserole – Thanksgiving’s Coming!

UPDATE!  My friend Maribeth says she chopped up cooked chicken breast to add to the dish and made a main dish meal out of it.  She also added a sprinkling of dry ranch dressing to the mayonnaise before mixing up.  I’m making this again with chicken!  YUM!  (I can imagine chopped ham also making a great addition.)

It was a Community Bible Study fellowship luncheon. That means that once a month our leadership group has a meal together and we talk, laugh, share, and in general, have a blast!

As I made my way down the food table I came across this casserole (well, one like it made by my friend Mary Ann).  I took a “little” scoop since I couldn’t quite name all ingredients.  BIG MISTAKE.

Big mistake because after the first bite I knew I needed to get back to that table and scoop up as much of this casserole as I could without totally embarrassing myself.

I predict — this is the NEXT BIG HOLIDAY VEGGIE DISH!  It is just that good.  In the USA, Thanksgiving is so close we are in menu planning mode.  All over the country folks are planning and attending work related potluck dinners.  And Christmas is just around the corner. Ya’ll need this casserole recipe.  Make it and try it out on your family. (They are going to love it.)  Then add it to guest menu list — and they will be asking for the recipe.  Just like I did from Mary Ann. 🙂

Mixed Vegetables

You will start with a bag of frozen vegetables.  Did I mention how easy this is to make?  Add some chopped celery, chopped onion, mayonnaise, cheese and top with crushed crackers.

This is a true story … Sunday nights we don’t eat a meal.  We have a big Sunday dinner after church and that should last till morning. (Never does, but it should.)

We usually snack or raid the refrigerator for a little something leftover.  My Sunday night supper was FANTASTIC because I ate this helping of mixed veggie casserole and loved every bite!

Buy some frozen veggies, make this casserole and see for yourself!

My New Favorite Mixed Veggie Casserole

After making this just one time, it will quickly become your favorite vegetable side dish!

Serves: 6 servings
Ingredients
  • 1 pkg. (16 oz) frozen mixed vegetables, thawed
  • 1 large onion, chopped
  • 3 celery ribs, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup mayonnaise
  • ¾ cup crushed butter-flavored crackers
Instructions
  1. Preheat oven to 350 degrees F.
  2. Lightly spray an 8" x 8" baking dish with canola oil.
  3. Mix first 5 ingredients together and spoon into prepared baking dish. Top with crushed crackers.
  4. Bake uncovered for 30 to 35 minutes or until heated through and bubbly.
  5. Serve immediately and enjoy!
Notes
*This recipe can easily be doubled or tripled!
