Chocolate Peanut Butter No Bake Cookies

No bake cookies platedAm I the only baker on the planet who has never made these awesome chocolate and peanut butter no bake cookies?  A few weeks ago my sous-chef dishwashing mom and I delivered a panful of PW cinnamon rolls to our friend Julie.  Julie had given us fresh

garden tomatoes the day before and we needed to return her basket.  In keeping with true southern tradition (never return a plate, or garden box, empty) we included some fresh-out-of-the-oven cinnamon rolls with our return.

When Julie returned our cinnamon roll pan she included No Bake Cookies!  (Aren’t we lucky?!)

The Chief Chocolate Eater who lives in this house along with our sous-chef dishwashing mom absolutely loved these cookies.  I nibbled on a few myself and quickly saw the need for making more!

Chocolate Peanut Butter No Bake Cookies

Fast and easy AND delicious!

Serves: 24 large cookies
Ingredients
  • ¼ cup butter
  • ½ cup milk
  • ½ cup peanut butter
  • 4 Tablespoons cocoa
  • 2 cups sugar
  • 3 cups oatmeal
Instructions
  1. In a large microwaveable bowl, mix together the butter, milk, cocoa and sugar.
  2. Microwave on high for 2½ minutes. Stir and microwave for an additional 2 minutes.
  3. Add peanut butter, stir until everything is melted. Add oats and stir again.
  4. Using a medium cookie scoop place cookies on a baking sheet to cool.
  5. Store in airtight container.

  1. I learned to make these “no-bakes” 100 years ago when I was in Campfire Girls. Don’t think we had a microwave back then, so I still make them the old-fashioned way, in a pan on the stove. I’ve got a whole bunch of Penzy’s cocoa (try it if you haven’t already, it’s yummy), so I need to whip up a batch. Hadn’t thought about these cookies for years.

  2. Catherine, Jamie always asked me to make him some “Arkansas” cookies. He called them this because after moving to Arkansas I always made these cookies and he loved them! I made him a batch when I was down taking care of him before he passed! Brought back sweet memories seeing this recipe on your blog this morning!

  3. I love these cookies, but have never had success getting them to the right consistency. I am thrilled to have a microwaveable version. I always bring them home from potlucks for Charles since they are his favorite!
