Happy July!  How was the weekend in your neck of the woods?  For the second week in a row we have kids and grandkids visiting!  That makes for lots of laughter and good times around here.  It also means a fair bit of cooking on my part and cleaning up on the part of my sous-chef dish-washing mom.  The weather map shows HOT all over the country and while we are in triple digits here our air conditioner decided to take a vacation :(   We quickly decided The Lost Sea Caverns, at 56 degrees, is the perfect place to spend a day.  These huge caverns are located in Sweetwater, TN (off I-75 between Chattanooga and Knoxville).  The hike down is about 3/4 mile and at the bottom of the cavern is the largest cave lake in the United States.  We toured the lake by boat and had lots of fun.  I highly recommend this as a fun and educational tour stop.

With all sorts of July 4th celebrations going on I decided I would share foodie pictures and links from MY FOODIE WISH LIST.  This is my on-going list of things I really want to make but haven’t done so yet.  I will include a link so if you get to it before me you will have the recipe :)

I am so darn hot at this moment that when I saw Vanilla Lemonade I wanted to jump right up and make it. I didn’t, so now it is a definite on my Make-It Wish List! This recipe was sent to Laurie at Simply Scratch from one of her readers. Thanks to both of you for sharing!

For the 4th of July who wouldn’t like some southern fried chicken?  I know I would and Mary at Deep South Dish definitely knows how to serve this up!


Oh for cute! From The Brown Eyed Baker we get Red, White and Blue Firecracker Popsicles. They look as refreshing as they do cute!

I am thinking I could do this all day long sharing the kazillions of cool recipes on the net.  But it has left me feeling a bit hungry and restless for my kitchen.  This week is Tuesdays With Dorie and we are serving up biscotti!  I hadn’t made it before now and you will see my first try results on Tuesday!  In the meantime, stay cool, have a fun holiday week and many blessings!  ~ Catherine

BBQ Pulled Chicken Sandwiches

We are just a week away from Memorial Day. It is the annual holiday that typically signals the beginning of summer.  Swimming pools open, picnics in the park, BBQ dinners on the patio and lots of fun in the sun!  A couple of weeks ago I was thinking about BBQ when Laurie at Simply Scratch posted a Barbecue Pulled Chicken Sandwich recipe.  It seems Laurie bought a new crock pot and discovered how wonderfully it cooks meat to be shredded.  I had chicken in the freezer, some homemade BBQ sauce in the frig, a crock pot and an unopened canned of Chipotle peppers in adobe sauce.  Perfect!  Now, just in time for your Memorial Day foodfests, ready … set … go!  You are gonna love how easy and delicious this is.

 

 

 

 

 

I always use chicken breasts, but your favorite pieces of chicken will work wonderfully in this recipe.  Trim off any excess fat from the boneless-skinless chicken and arrange them in the bottom of your slow cooker.

Combine homemade or store-bought barbecue sauce with minced garlic, minced Chipotle (they are HOT, use according to your personal taste.)  I use one, you may want to use more than one.

Pour the sauce over the chicken and cook on high for 3 to 4 hours or until the chicken is fully cooked and falling apart.

Once the chicken is well cooked, turn off the heat to the slow cooker, remove the chicken and shred.

This chicken will be moist and easily pulls apart between two forks. Once shredded return the chicken back to the pot and let cool down slightly.  As this cools the sauce will thicken around the chicken.  Serve on your favorite hoagie or multi-grain bun.

Barbecue Pulled Chicken Sandwiches

Serves 4-6
Prep time 10 minutes
Cook time 4 hours
Total time 4 hours, 10 minutes

Maybe the best pulled chicken sandwich you have ever eaten!

Ingredients

  • 2lb Boneless, skinless chicken (Breast or thighs)
  • 3 cups Homemade or Commercial BBQ Sauce
  • 1 clove Garlic, minced
  • 1 Chipotle Pepper, minced
  • 1 tablespoon Adobo Sauce (from the canned chipotle)
  • 4-6 Hoagie Roll or buns

Directions

Turn off the heat to the slow cooker, remove the chicken and shred with two forks. Return back to the pot, stir and let cook down so the sauce can thicken up, about 15 minutes.

I am behind on my Bible reading, behind in housework, and definitely behind in cooking.  Anybody else right there with me?  Mother’s Day is this weekend and as the calendar races forward I am planning to cook for my mom on Sunday.  Are you doing anything special this weekend?  I would love to hear your plans.  Just drop me a comment at the bottom of this post!  I love hearing from you.

Laurie at Simply Scratch posted a variety of pictures and recipes today that she has made in the past.  I stopped at this Orange Glazed Salmon Salad.  I am already into my summer salad mode and this looks awesome.  Catch the recipe at Simply Scratch.

Cherry Limeade is on the menu for Mary at Deep South Dish. While I’ve never made a Limeade at home this looks so delicious and refreshing.  I’m pretty sure the kids and grown-ups alike will enjoy this perfectly summer drink!  I have been drinking alot of iced tea lately and I think Mary’s sno-cone syrup might be just perfect in a tall glass of tea.

Would you believe Frozen Lemonade Pie in a Jar!!!  The ladies at Our Best Bites are two of the most creative women, moms, wives, cooks, bloggers… you name it.  I LOVE lemon and this recipe starts with a graham cracker crust, mix together some Cool Whip, sweetened condensed milk, and lemonade concentrate.  Recently I posted one of my favorite lemon recipes for Lemon Ice Box Pie but I gotta tell ya, I have my sights are making this fast and easy recipe.  I want to serve it in little jars just like this :)   Do stop by Our Best Bites for the recipe!
I hope I have given you a couple new ideas for some spring baking.  I’ll stop my bloggin’ tonight by adding this Candied Pecan Cheese Braid.
