Here’s a perfect breakfast recipe that you can easily cook ahead or prepare the night before and just reheat in the morning. You should try this delicious Bacon & Vegetable Frittata!
If you don’t know what a Frittata is, it’s actually an Italian egg dish that is similar to an omelet. Frittata which literally means “fried” in Italy is a hearty egg dish that is first cooked on the stove and finished in the oven.
What’s nice about this dish is it is very easy to prepare and you can add any ingredient that you want! From sausages, cheese, herbs, vegetables and even leftover meals!
To start my favorite Bacon & Vegetable Frittata recipe, you will need the following ingredients:
- ½ yellow onion
- ½ sweet pepper
- 5 slices of bacon
- 5 leaves of fresh basil
- 4 small tomatoes,
- ½ cup diced mozzarella
- 2 tbsp butter
- 3 cloves garlic
- 4 eggs
- 1/8 cup milk
- Salt and spices for seasoning
Step1: First you have to julienne the onions thinly. Just lay it flat on the chopping board and slice from bottom up.
Step 2: Do the same step to the sweet peppers, bacon and fresh tomatoes. You can opt to remove the seeds of the tomatoes, but including them won’t harm
Step 3: Chop the basil or do the chiffonade by stacking the leaves together, rolling it and gently slicing it to strips. This way, you’ll get to slice the basil thinly without crushing its leaves. This method of slicing is also applicable to any leafy herbs and vegetables.
Step 4: Crack the eggs to a clean bowl, add the milk and season with salt and spices. What I’ve used was onion powder, freshly cracked pepper, parmesan cheese, and Spanish paprika. Beat until foamy.
Step 5: Now that all your ingredients are ready, it’s time to grab a non-stick pan. Make sure to use a metal one or anything that doesn’t have a plastic handle or material, because you will finish the Frittata in the oven. A cast iron is also perfect for this recipe! Pre-heat the oven to 360 F.
Step 6: Start by melting the butter in medium high heat. Add the bacon and fry until crisp or golden brown. Once the bacon is cooked, remove from pan and set aside.
Step 7: On the same pan, sauté the garlic. Add the onion and sweet peppers. Season with salt and pepper.
Step 8: Once the onions are soft, add the fresh tomatoes and cook for about a minute. Scatter the cooked vegetables all throughout the pan.
Step 9: Pour the egg onto the pan and cook for a minute until the sides are cooked. Top with bacon, diced mozzarella and sliced basil leaves then transfer to the oven. Cook until the eggs are done and the cheese is melted.
Step 10: Serve the Bacon & Vegetable Frittata in pan while it’s hot. Be careful with its hot handle and use a kitchen mitten to avoid burning your hands. You can also serve it upside down on a plate!
In a rush? Pre-cook it!
You can cook the frittata on the night before, cool it down, cover with foil and put in the fridge. Just reheat in the morning. Or slice it to individual sized, wrap in a foil for personal snack that you can easily warm up.
