I just love when you share a recipe with me! I am always on the look out for tried-and-true recipes and when they come from friends and family that puts them right at the top of my list!
My niece, Christina, sent this recipe through her Facebook page. Here is what she has to say about these tacos. “I wanted to share my recipe for easy rotisserie chicken tacos. It’s super simple and quick and is perfect for an evening when it’s too hot and humid to cook! ”
1 or 2 rotisserie chickens depending on how many people you are feeding.
1 or 2 packages taco CHICKEN seasoning
1 package shredded cheese
1 container sour cream
shredded lettuce
pico de gallo (can be found premade at Walmart in produce section)
corn tortilla’s
a bit of cooking oil
Remove chicken meat from the bone and tear into semi-shreds into a large bowl. Coat with 1 package chicken taco seasoning per rotisserie you are using. Toss chicken to coat. Use your hands and really get it covered well. Heat for a few minutes in the microwave and then cover.
Use a griddle or some sort of flat pan and pour a small amount of oil into the pan/griddle. Give it a few minutes to heat up and then brown enough corn tortilla’s to serve dinner with. You can flip them a few times to make sure they really brown nicely. Place in a warmer or covered dish. Serve with all the trimmings and enjoy!
