I am posting this recipe for ham salad the week before Thanksgiving because you are going to need it soon.  Many of you bake up a big o’ turkey for Thanksgiving but then have a bit of ham on the side for those who don’t want turkey. (I know, but there really are people who don’t like turkey.)

I always buy Kentucky Legend Ham.  They should be sponsoring this post, but sadly they are not.  None-the-less I had a pound of ham leftover from cooking up this outstanding soup of Ham, Potato, and Corn Chowder.

My New Favorite Veggie Casserole – Thanksgiving’s Coming!

UPDATE!  My friend Maribeth says she chopped up cooked chicken breast to add to the dish and made a main dish meal out of it.  She also added a sprinkling of dry ranch dressing to the mayonnaise before mixing up.  I’m making this again with chicken!  YUM!  (I can imagine chopped ham also making a great addition.)

It was a Community Bible Study fellowship luncheon. That means that once a month our leadership group has a meal together and we talk, laugh, share, and in general, have a blast!

As I made my way down the food table I came across this casserole (well, one like it made by my friend Mary Ann).  I took a “little” scoop since I couldn’t quite name all ingredients.  BIG MISTAKE.

Are you ready for soup?  I am!

That is why I am starting my fall soup-a-thon  with a luscious ham, potato and corn chowder that is not only filling but very lovely in color and texture too!

Homemade Meatballs and Marinara Sauce

How often do you hear … “These are the best _______ (fill in the blank) you have ever made”?  
 Ever? I cook …  a lot.  My sous-chef dish-washing mom and The Chief  are very kind and complimentary of my cooking.

But recently I received the “these are the best meatballs you have ever made” response followed by the appropriate “yummy” and “thanks Babe!”  I was so surprised and elated all at the same time.
